Wine Making
Picked into 10kg baskets and gently whole-bunch pressed. Settled warm and racked with solids to barrel (25% new) for fermentation by wild yeasts. Stirred fortnightly for 11 months. Blended in tank and lightly fined before bottling.
12.5% alc/vol, 7.45 standard drinks.
