Cold soaked and using 15 % whole bunch, the juice was gently extracted using a sieve and light punchdowns then pumped over and left for 18 days on skins. It then settled for two days before being lightly racked to French Oak (25% new) for malolactic fermentation and maturation on lees for 14 months before bottling.
15% alc/vol, 8.8 standard drinks.
