2017 Colour Series Shiraz
A richer and more full bodied cool climate Shiraz. Hand picked at dawn to ensure the freshness of the fruit the grapes were cold soaked for 48 hours before gentle extraction through light punchdowns and pumping over of juice only through a sieve. Left for 18 days on skins and then basket pressed to tank where it was left to settle for 2 days. Lightly racked to Oak for Malolactic fermentation and further maturation on lees for 14 months. 25% new french oak.
