2023 Colour Series Pinot Gris 12 Bottle Case
The cooler vintage in 2023 proved ideal growing conditions for this smooth drinking, well balanced Pinot Gris. The sweetness of pear and crisp, freshness of apple skin is well balanced in this cool climate, dry aromatic. A dry style white wine that can comfortably sit alone or be pair with a range of meals.

Hand-picked fruit was de-stemmed back into bins to "cold soak" for 48 hrs in order to extract some colour, flavour and textural compounds from the skins before pressing.
The free run juice and pressings were fermented separately and aged separately. The free run juice was aged in stainless steel after a long cool ferment. The pressings are aged in seasoned oak and left on light lees for complexity. The two are then blended together around 6 weeks prior to bottling.

Showcasing a more complex array of flavours, like some of its European counterparts, this Pinot Gris can be enjoyed alongside some more aromatic and richer dishes. It’s brief time in some old oak has given it a smooth and slightly richer mouthfeel, which can easily stand up some South-east Asian dishes like bao buns and Thai street food, or some Italian specialties, such as pesto risotto and pastas with baked fish, it’s balance of acids, fruit flavours and a savoury mouthfeel can compliment a wide range of dishes and flavours.
