The 2021 Legacy Chardonnay is a richer more full bodied style of wine. The 2021 vintage was an exceptional vintage for this grape varietal which presented us with a range of options to produce this reserve limited batch wine.

Vine to Wine

The 2021 Legacy Chardonnay was harvested over two picks for differing ripeness in the fruit. The batches were kept separate for fermentation but both were feremented using different yeast strains including a wild ferment in stainless steel to offer different wine profiles post ferment. The batches were kept separate for the aging process on lees and were matured in 50% new custom French oak puncheons. After 12 months the wine was blended before being returned to barrel for a further 6 months.
