Harvested by hand, grapes were destemmed and fermented in seasoned oak puncheons (500l barrels). The grapes were gently hand plunged 2-3 times a day on skins for 40 days in before pressing to 25% new French Oak & seasoned oak barrels for maturation and partial malolactic fermentation.

Such a complex array of fruity and savoury flavours, soft acids and tannins, such as those in the 2023 Colour Series Pinot Noir 777 make it a great pairing with meals that can also boast complex flavours and aromatics. Dishes like Greek souvlaki, or tomato-based sauces will complement and soften the acids and bright red fruit flavours in the wine, whilst dishes with stronger savoury or roasted elements , such as roast chicken, mushrooms, or bacon compliment the savoury spice flavours and tannins in the wine.
