Hand picked at dawn this 2023 Shiraz is a great example of cool climate Shiraz with earthy tannins and distinctive white pepper hints. After hand picking the berries were destemmed and crushed into 3 ton fermenters. The ferment was temperature controlled to ensure a long and cool fermentation. After 6 weeks on skins the wine was pressed and moved to 500l French oak puncheons (20%) new. Aged for 12 months in oak and bottle aged for 6 months prior to release.
Pictured : Cool climate Shiraz fruit differs from the warmer climate cousins as the slow ripening process gives a more elegant smoother style of red wine.
Our 2023 Shiraz pairs well with a broad range of foods because its bright fruit, peppery spice, and fine tannins complement savory, earthy, and lightly spiced dishes without overpowering them.
