Hand-picked fruit was de-stemmed back into bins to "cold soak" for 48 hrs in order to extract some colour, flavour and textural compounds from the skins before pressing.
The free run juice and pressings were fermented separately and aged separately. The free run juice was aged in stainless steel after a long cool ferment. The pressings are aged in seasoned oak and left on light lees for complexity. The two are then blended together around 6 weeks prior to bottling.

With its rich fruit flavours, savoury backbone and fine acids, will be right at home with equally savoury dishes such as roasted cauliflower, chicken, pork, as well as rich seafood, such as swordfish, BBQ prawns and crab. The lovely aromas along with refreshing acidity of this wine also mean that it can compliment equally strong and aromatic cheeses/sides, such as washed rind/soft cheeses, chimichurri, pesto and salsas, making it a very versatile and moorish paring with a range of different foods.
