Hand-picked in the cool of the morning of late March 2024, the grapes were gently whole bunch pressed.
Free run and pressings juice were kept separate. The free run juice was fermented in stainless steel using an aromatic yeast. The fermentation took place over 21 days to retain freshness and varietal characteristics. The pressings were separated, fermented in stainless steel and then transferred to seasoned oak puncheons for texture. A portion of the free run juice was prevented from fermentation to create the süss. Approximately 6 weeks prior to bottling the free run and pressings were blended together and a small amount of the süss reserve added to add a complex finish.

A brilliant example of how aromatic and versatile Riesling can be, with the aromas and fruit intensity necessary to stand up to equally fresh and herbaceous Asian seafood dishes, whilst having the fresh acidity and mineral mouthfeel that makes it an excellent contrast to richer dishes, and can cut through fats in meats such as roast chicken and pork belly. Though in either case, whether it’s cutting through richer dishes, or served alongside something fresher and lighter, it’s the perfect wine for entertaining.
