2023 Colour Series Chardonnay
A golden yellow hue this Chardonnay is medium in body and acidity with a nose of ripe apples, guava, vanilla and brioche which translates on the palate and combines with a smooth, creamy mouthfeel from the oak make this both a complex and moorish wine. With lingering and subtle oak finish thanks to maturation in 25% new puncheon (500L) French Oak, it drinks well now but promises great ageing potential.

Multiple ripeness hand picks across two clones, the Chardonnay grapes were pressed and the juice then separated into batches for separate fermentation using different strains of yeast, each imparting a unique aroma and taste profile to add to complexity. Half of the volume was fermented in tank and half fermented in 2 year old French oak puncheons. Aged on lees in 25% new French Oak 500L puncheons for 12 months with partial malolactic fermentation.

A medium bodied and balanced Chardonnay, the 2023 vintage of the Colour Series Chardonnay can stand up to and pair well with a range of dishes, from grilled chicken or pork, to richer creamy & buttery seafood, or vegetarian dishes. The balanced use of oak, and the savoury flavours that have come out from the aging process, along with beautiful ripe fruit flavours, will allow this Chardonnay to match the savoury flavours of roasted veg, grilled meats such as chicken and pork, or some nice buttery seafood dishes, whilst still retaining enough fresh acidity to cleanse the palate.
